Jalapeño Bacon Spareribs


The messy fingers, the sauce lined cheeks, and the growing pile of bones -we love ribs around here! Where some might see a boring, tired cut of meat, we see a blank canvas for flavor! Our Jalapeno Bacon spareribs are delicious, melt in your mouth tender, with a touch of sweet and punch of heat that will remind you why you fell in love with ribs in the first place! Don’t let the name fool you, the heat in this recipe is not overwhelming and you can always scale back the spicy as needed. Those Florida Guys seasonings used in this recipe:


Yields: 2 Racks | Prep Time: 30 Minutes | Total Time: 4-6 Hours

Ingredients:

2 racks pork spareribs

4 tbs. yellow mustard

Those Florida Guys FL Gulf BBQ

½ stick unsalted butter

4 tbs. honey (we used hot honey)

Pickled jalapeño slices

2 tbs. pickled jalapeño brine

6 strips bacon

BBQ sauce

Process:

1 | Bring the smoker up to 250 degrees.

2 | Pat the ribs dry and remove silver skin membrane. Pat dry again as needed.

3 | Mix the mustard and jalapeño brine and evenly apply to both sides of the ribs.

4 | Liberally apply FL Gulf BBQ to both sides of the ribs to form a thick coat of rub.

5 | Place the ribs into the smoker at 250 degrees for 2.5-3 hours, or until the rub has set firm.

6 | Cook the bacon to desired crispiness and set aside until cool, then crush into bits.

7 | Pull the ribs from the smoker.

8 | Bring the smoker up to 300 degrees.

9 | Prepare two aluminum foil boats (one for each rack).

10 | Pour 2 tbs. honey down the length of the foil, then lay on 4-5 pats of the butter.

11 | Seal up the foil and lay the ribs meat side down in the smoker for another hour.

12 | Once the bones are showing, flip the meat side up, unwrapped for 15-20 minutes before applying BBQ sauce.

13 | Apply barbecue sauce and let is cook another 15-20 minutes in the smoker to let the sauce set.

14 | Remove the ribs from the smoker.

15 | Sprinkle the bacon and jalapeños over the top and drizzle on extra honey if desired.

16 | Serve and enjoy!
