Florida Smoked Boloney


When we were kids, the summertime lunch of choice was bologna with a slice of American cheese on white bread and as an added treat, sometimes Mom would fry the bologna in a skillet and melt the cheese on top! Now that we are grown, we are kicking this recipe up by smoking a whole bologna deli chub and making it shine with Those Florida Guys FL Gulf BBQ! The recipe is quick and easy and will make bologna sandwiches great again! If you have access to a meat slicer, you can slice the finished chub as thick or thin as you like. We prefer a thicker slice and fry them up on the griddle. We portion out, vacuum seal, and deep freeze the leftovers to make it last indefinitely.

Yields: variable Servings | Prep Time: 20 Minutes | Total Time: 4 Hours

Ingredients:

5 lbs. bologna chub (mixed meat is fine)

Mustard (we used Dijon)

Those Florida Guys FL Gulf BBQ

Barbecue Sauce

Process:

**You can buy a whole boloney chub at your grocery store or deli -just ask!**

1 | Remove the plastic covering from the chub and pat the whole thing dry.

2 | Using a sharp knife, score in a diamond pattern about ½-inch deep.

3 | Coat the baloney with the mustard, working it into the scores as much as possible.

4 | Apply an even coat of FL Gulf BBQ over the entire boloney, working it into the scores as much as possible.

5 | Let the boloney set on the counter at room temperature for about 10 minutes and apply another light coat of FL Gulf BBQ to make sure there is full coverage.

6 | Bring the smoker up to 250 degrees.

7 | Smoke the bologna for 3-3.5 hours.

**you can spritz if you like, we did not**

8 | Once the bologna has nice color and the rub has set, brush on your favorite barbecue sauce, then smoke for another 25 minutes.

9 | Once the sauce has set, remove it from the grill and let cool for 10 minutes.

10 | Slice to desired thickness and serve as sandwiches or bologna steaks!

**we like to fry the slices up on the griddle for extra flavor and texture**
