Cured Egg Yoke

Yields: 2 Servings | Prep Time: 10 Minutes | Total Time: 5-7 Days

| Mix 3 parts salt to 1 part sugar and set aside.

| Separate the egg yolks from the whites.

| In a container that has a lid, pour the salt-sugar mixture in an even layer.

| Make divots with a spoon or your knuckles about the size of the egg yolks.

| Carefully place 1 egg yolk into each divot and cover completely with the salt-sugar mixture.

| Refrigerate the covered egg yolks for 5-7 days.

| After 5-7 day , check the firmness of the yolks. If they are firm enough to handle, wash off the egg yolks gently with water, then place them into an oven at the lowest temp for 1-1.5 hours.

| Once the yolks are cured and firm to the touch, shave them with a grater onto your steaks or whatever you’d like!
